COMMUNITY LESSON "Crock Pot Cooking with the Cove"

This was an educational lesson at Orange Coast Community College in conjunction with the campus food pantry "Pirate's Cove".

Target audience: Students

An introductory lesson: it covers basic information about the importance of vitamins, minerals and fiber in a person's diet. Lesson includes a demonstration of how to cook nutritious meals that can last for several days once refrigerated. Participants were required to watch a video about food safety. 


RESEARCH PAPER "Ginger (Zingiber officinale)"

This research paper was written for the "Introduction to Foods" class. It was delivered to a classroom audience of approximately 20 people.


POWERPOINT PRESENTATION "Phytochemicals and functional foods"

This powerpoint presentation was created for the "Introduction to the Medical Nutrition" class. It was presented to a classroom audience of 15 people. 


BIBLIOGRAPHY ASSIGNMENT "Nutrition intervention and dietary restrictions in patients with heart failure"

This bibliography is an overview of twenty recent scientific articles on a subject.
